Vegan Blueberry Muffins!

Classic blueberry muffins today! Simple, delicious and perfectly paired with a happy weekend morning!




Blueberry muffins are so tasty and timeless! The idea is simple.. blueberries... and.. well, that's it.. blueberries. It's great! So what makes them so good? Well, I'm not sure. I just know that blueberry muffins are one of the most successful and popular among many other muffin varieties- and it's easy to understand why when you eat them! It just works! This recipe is SUPER easy, simple AND scrumptious! Fluffy, soft and just the right amount dense- I think you're going to love it!

Vegan Blueberry Muffins


Yields: 12


Ingredients:


  • 2 bananas

  • 2 cups flour

  • 1 cup oat milk

  • 1 cup sugar

  • 1/3 cup melted coconut oil

  • 2tsp baking powder

  • 1 tsp vanilla

  • 1 cup blueberries

  • brown sugar for topping *optional*

Directions:


1. Preheat oven to 375 degrees! Grease a muffin pan.


2. Mash the bananas with fork in a medium sized bowl.


3. Once mashed, add the rest of your wet ingredients; coconut oil, oat milk, vanilla. Combine those with a fork. Next, add your remaining ingredients with the exception of the blueberries; flour, sugar, baking powder. Combine all of the ingredients with a hand mixer until it forms a smooth batter. If you don't have a hand mixer, use a whisk or fork!


4. Finally, add the blueberries! Delicately fold them in. Transfer your batter to a greased muffin pan, filling each slot about 3/4 of the way. Bake for about 25- 30 minutes. Test if a toothpick comes out clean to ensure they are done! ** Check on your muffins after fifteen or twenty minutes to see how they are doing, they may not need the whole half hour!**


5. Cool and enjoy!
