Summer Gazpacho

Summertime calls for summer recipes, so whats better than a good soup served chilled?! Full-bodied and full of flavour, let's dive in to some gazpacho!

So I'm going to be working on quite a few summer dishes to bring you guys this month and I wanted to start with this Gazpacho! I love soup, its one of my favourite meals. A good soup with some fresh bread.. ahh.. daydreaming now..

Anyways, it's tricky in the summer because you aren't really in the mood for a hot soup on a hot day.. sometimes you get those summer night storms to give you a break from the heat, but other than that.. You seem to only crave salad, fruit- and water when your body is a little overheated. Heavy meals and hot meals aren't really appetizing sometimes, but its still important to get some good nutrients and tasty food in you! Especially if you are partaking in a lot of exercise or hiking, cycling etc. You've got to fuel up!

This gazpacho is ice cold and super refreshing! Fresh cucumber, tomato, basil- so good for the weather! Especially great for entertaining friends or family too! You can make it in large amounts and feed everyone- and its naturally vegan! it doesn't get much more vegan than a bowl of blended veggies! Did I mention that it is super easy to make too?

So lets get to it!

Summer Gazpacho

Yields: Approx 6-8 cups



  • 5 tomatoes

  • 1/2 onion

  • 3/4 bell pepper

  • 1 cucumber

  • 3 stalks celery

  • juice of half a lemon

  • 3 cloves of garlic

  • 1/2 tsp salt

  • 3 tbsp olive oil

  • pinch of fresh basil

  • 4 tbsp balsamic vinegar

  • drizzle vegan yogurt or vegan sour cream (tofutti) for topping

  • basil leaves for topping


1. Prepare your veggies! Chop all the veggies! Rough larger chunks are just fine as its all going into the blender anyway!

2. Add all of your ingredients into a food processor or blender and blend!. Blend them in small intervals so they blend easily and don't make a mess. Taste test to ensure it is to your liking and then transfer your mix into a metal bowl or pot and give it a quick stir.

3. Chill! Now that your soup is to your liking, put it in the fridge for at least 30 minutes before serving!

4. Serve! Once chilled, add desired toppings and serve your soup with some fresh bread if you like!
